Healthier version of tater tot casserole

I’m sure you all have heard of tater tot casserole. Maybe you are like me and have never tried making it because it sounds terribly unhealthy, and it is. BUT… I played around with some healthier ingredients and tried it out and it was really good! My family enjoyed it, so I thought I would share.

I found the veggie tots in the frozen veggie aisle at the supermarket. Green giant makes a broccoli and cheese filled tot and also a cauliflower tot. I have not tried the cauliflower, but the broccoli and cheese was delicious. I probably could have doubled the recipe and added more tots and it would have been even better. The picture above was only one package of tots. So if you really want more tots, buy one more package and add that. (I promise they are actually good, I know it sounds a little gross to eat a broccoli filled tot.)

So lets get to the recipe:

 

Ingredients:

  • 1lb of lean ground beef ( I use 93/7, the leaner the better)
  • 1/2 onion
  • 2 cloves of minced garlic
  • 1 tbsp of Worcestershire sauce
  • 15 oz can of green beans
  • 10 oz can of fat free cream of mushroom soup
  • 2 cups of fat free cheddar cheese
  • 1 package of Green Giant veggie tots (or two if you want more tots)
  • Salt and pepper to taste

 

Directions:

  1. Preheat oven to 375 degrees
  2. Lightly grease a 9 inch baking dish with 0 cal cooking spray
  3. Brown the beef and onions in a large skillet
  4. Drain grease from beef and add garlic. Cook a minute or so more
  5. Mix in Worcestershire sauce and add salt and pepper
  6. Transfer beef mixture to the baking dish and spread out evenly
  7. Add cream of mushroom soup on top of the beef
  8. Add a layer of green beans and spread evenly. Salt and pepper this layer
  9. Add a layer of cheese
  10. Top with tots
  11. Bake for 30 minutes or until  tots are golden brown and cheese is melted. Keep an eye out after 15 minutes so you don’t burn your meal. Every oven is different!
  12. Serve and enjoy 🙂
