I tried this meal out for dinner the other night and it was a hit with the kids! Anytime I make something new and my kids actually eat AND like it I feel like I hit the lottery.
With this recipe there are several different ingredients you can add, omit, or swap to make it fit your diet or preferences. In fact, I plan to change it a little next time I make it. It was really good though the way I made it so I will share exactly what I did.
- 1lb of ground turkey (97/3)
- 2 minced garlic cloves
- 1tsp of oregano
- 16oz of low sugar marinara sauce
- Salt to taste
- Pepper to taste
- 1 1/2 cups of grated cheese ( I used fiesta blend and mozzarella half and half)
- 2 cups of elbow macaroni
- 2 tbsp of sour cream
- Half of a chopped yellow onion
- Two green peppers chopped
Step 1: Preheat oven to 425 degrees. Cook turkey with onion and peppers until turkey is cooked through. Drain if any fat exists.
Step 2: Add marinara sauce, oregano, garlic, salt, and pepper to turkey mix
Step 3: Cook macaroni according to package and drain. Add sour cream to macaroni and mix well
Step 4: Spray 13×9 pan with a non stick zero calorie spray. Layer macaroni and then turkey mixture on top. Add the cheese last.
Step 5: Bake until cheese is melted and brown and bubbly on top. This took my oven about 10 minutes.
Voila! That’s it.
As far as substitutes go there are many. You could easily add any other veggies that your family likes. I think next time I will use fat free sour cream and add more ( I was trying to keep the fat to a minimum with this dish so I shorted the sour cream as mine was not fat free). Also you don’t have to use marinara sauce, you could use tomato sauce, or any kind of spaghetti sauce that you like. Same goes for the cheese. Use what you have left in your fridge or what you like. It is going to taste good regardless! Like I said my kids loved it and they are very pick eaters.
