My goal is to start posting more recipes of the macro friendly dinners I make. I hear often that eating healthy is “so boring” or it’s too expensive. And some may just not know what smart eating really consists of.
Now, I apologize in advance that I am not some kind of chef or recipe writing professional 😁. However, I will do my best to be clear with instructions.
This chicken stir fry recipe is a meal that we eat often in my household. It really is super simple with only a few ingredients and it tastes delicious. Even the kids like it! 👍🏻
I tried to put the main products I used all in one picture for an example. I will list them below.
- 4 chicken breasts
- 5 tablespoons of P.F Chang’s teriyaki sauce
- One bag of frozen stir fry veggies
- Minute white rice
- 1 tsp Pepper
- 1 tsp Garlic salt
Step 1: Cut up chicken breasts into cubes
Step 2: Boil the water for the rice and follow the box instructions. Make as much as you would like depending on how many you are cooking for. I typically cook one box serving of rice for each mouth I’m feeding.
Step 3: Add the chicken to the skillet and cook until chicken is no longer pink in center and cooked through. Season with pepper, garlic, whatever spices you like.
Step 4: Add teriyaki sauce. Don’t be afraid to add more or less based on your personal preferences. The carb count on the sauce is decently low which is why I choose this brand.
Step 5: Add the veggies to the skillet with the chicken and sauce and cook until veggies are cooked through.
Step 6: Voila! You’re done. I like to put a cup of cooked rice on my plate first as a base and then I put the veggies and chicken mix on top.
Easy right ? With a cup of rice and 112g of chicken I calculated the macros to be somewhere around: 36P 43C 5F with a total of 350 calories. So it is a decent low calorie meal and delicious! And remember if you make too much you can always use it for tomorrow’s lunch😃
